We love oysters. We usually buy a bushel and steam them to enjoy with friends and family, we make an event of it, it’s so much fun and so yummy.

There are so many ways to eat oysters; raw, steamed, fried, baked, grilled, poached, stewed, in soup, in stuffing, in a chowder, in a sandwich, in a casserole, as a dip … The possibilities are endless.

You can either buy oysters in the shell, cook and shuck them yourself or buy them already shucked by the pint or quart. Buying the oysters already shucked is perfect for so many recipes including OYSTERS ROCKEFELLER!!

The predicament is …. how do you make it if you don’t have the shells for the oysters? Simple you use our handmade ceramic oyster shells. These things are amazing. You put the oysters in, pile on your toppings and then put them on the grill (our preferred method) or in the oven. The ceramic shells hold the heat giving you plenty of time to enjoy them. When you’re done just toss them in the dishwasher.

We’ve had Oysters Rockefeller a few times in the last month or so and can’t believe how simple it is to make. It’s the perfect appetizer or dinner.

The recipe we’ve been using is combination of multiple recipes we found online. Let us know if you try it and what you think!

Oysters Rockefeller

  • Ingredients (measure with you’re heart.

  • Oysters, Bacon, Butter (we prefer grass fed), bread crumbs, fresh rosemary, cheese (white cheddar, gouda, havarti - whatever makes you happy and remember to measure with your heart), bread crumbs and avocado oil spray (Pam will work as well).

  1. Preheat oven or grill.

  2. Chop and cook about 6 slices of bacon, draining the fat when done.

  3. Mix a few tablespoons of butter with some rosemary until it looks like a herby butter.

  4. Grate cheese.

  5. Spray the ceramic oyster shells with the avocado oil spray.

  6. Place the ceramic oyster shells on a sheet pan and place two or three oysters in each, depending on size.

  7. Place a dollop of butter on top of each pile of oysters.

  8. Add a small handful of bacon pieces to each oyster shell.

  9. Add a small pinch of bread crumb or each oyster shell.

  10. Cheese - top the shells with cheese, measure with your heart.

  11. Place full ceramic oyster shells directly on the grill. If you are using the oven you can keep them on the sheet pan to make it easier.

  12. Cook for about 10 minutes.

  13. Remove from the heat and enjoy! Remember the ceramic oyster shell will be HOT!!!

  14. You can add a squeeze of lemon, hot sauce … whatever you like!
